Produced by the Victorian Department of Agriculture, this short instructional film demonstrates the correct method for cleaning and dressing poultry. The film is an interesting historical insight into the changing nature of food production and distribution. It would once have been normal for people to handle a fresh chicken carcass rather than a pre-prepared one from the butcher, and the size of the chicken is considerably smaller than today’s standards.
